UNI’s Rialto Dining Center hosts annual takeover with local food entrepreneurs
CEDAR FALLS, Iowa – University of Northern Iowa Dining and John Pappajohn Entrepreneurial Center are proud to present the return of the second annual UNI Dining Takeover in collaboration with local food entrepreneurs. From March 25 to April 3, five local catering companies will showcase signature dishes on their menu to students, faculty and all community members at Rialto Dining Center.
The second annual #UNIDiningTakeover lineup will spotlight a combination of new and returning experienced food entrepreneurs from 11 a.m. - 1:30 p.m. on the following dates:
- Monday, March 25: Daniel and Mom’s Kitchen by Teta Toe
Featured menu item: International chu rice and gravy - Tuesday, March 26: Dominique’s Seafood by Dominique Wallican
Featured menu item: Good old-fashioned Southern crab boil - Friday, March 29: Salt N Pepper by the Perkins Family
Featured menu item: Seared catfish, coleslaw, and spaghetti with meat sauce - Tuesday, April 2: Ms Kim’s Plates by Kim Caldwell
Featured menu item: Baked potatoes with grilled chicken - Wednesday, April 3: Tu Wayy Catering by Jadell Moné Boyd
Featured menu item: Loaded fries with chicken strips and mac & cheese
“This celebration in the diversity of foods is designed to bring the University and surrounding community together”, explained Lindi Roelofse, T. Wayne Davis Chair in Entrepreneurship. “This unequivocally involves good and interesting food as a center of social gatherings, but also co-creation of solutions for win-win economic recipes.”
This showcase celebrates a taste of Cedar Valley to support local entrepreneurs scaling their ventures and diversifying their food-based product lines.
